Ok so I put myself out there, not my picture though. Found what I think to be a perfect person for me and emailed... but did not get a response back. I ended up emailing them at a different address, and I got something back... ya...
But how do I know explain my weight gain from the meds...?
I gain 80 pounds and lost 35 already, but still have 45 to go, to get back to 120...
How do I explain this?

Don't explain anything. You are who you are right now. If they really care about 45 pounds, do you really care about them?
