"Sparingly soluble" means you probably could get the 20 mg Lexapro to dissolve in say, a pint of water, probably easily. It won't look that way, probably, because some of the extra stuff in the tablet might not dissolve. I think your best bet is to break it in pieces and just "eye-ball" a certain amount-that way you don't have to worry about the stability of Lexapro in water. It would also probably go into solution in vodka (ca. 40% alcohol) easily. If you did that, you might want to dissolve the Lexapro in just an ounce or two of vodka and then have a small amount of that solution to avoid having too much booze with the Lexapro, although they supposed don't interact. But I personally don't recommend that route; just told you for info.
Another idea is to get some gelatin shells (from your pharmacy or empty a med you'll never use again, like maybe some old Prozac capsules?), crush the Lexapro and put the same amount in say, 5 or so shells. You can do this very accurately just by eye. Then put the other side of the shell on and they should be stable for months.
Lastly, on the outside chance you have a friend that is a chemist, have him/her take them to the lab and measure the crushed tabs out analytically! Best of luck.
