I've wondered the same thing. Does the brain stop producing as much serotonin? Do the MAO enzymes step up their activity to destroy the extra serotonin? Are new reuptake receptors created to suck up the extra serotonin? Do norepinephrine or dopamine receptors lend a hand and start sucking up serotonin? No idea. But I have a hunch that somewhere in there lies the cause of poopout.
