There was a clinical trial for children with Crohn's and colitis that gave them between 3 and 6 grams of NAG a day. That sounds like a really high dose to me. I'd suggest staying at 500 mg for at least a week, then maybe try 750 mg. More isn't always better. Sometimes less is more.
