I thought I would add that each time I do a period of Gluten-free, then add gluten back in, my gastro-intestinal symptoms seem to come on faster and worse than before.
Our gut microbiome is constantly changing in response to our diet. I wonder if going gluten-free causes the bacteria that digest gluten to die off, and this could account for worsening of symptoms - gut symptoms at least - when gluten is re-introduced. Some podcasts I've listened to talk about such changes to gut microbiome with dietary changes. I've never gone off gluten long enough to ascertain affects on mood symptoms which may take a longer period of gluten-free?
Note: The symptoms tracked in the study from my previous post included intestinal and extra-intestinal symptoms. The latter included anxiety, cognitive disturbances and others. All were improved after 6 months (see Figure 5 & discussion). It doesn't look like they checked improvements over shorter periods.
