Well, it's "normal" sort of behavior for someone with an eating disorder... It's not healthy, it's more likely to lead to weight gain than eating regular meals throughout the day, and there's not a doctor or dietician in the world who'd advise doing it. Hard as it is, I think you'd be much better off learning to eat three meals and three snacks a day.
As for the liquids, that's another story. You can certainly drink too much water -- I tend to do that, partly part of the ED, partly other reasons, and I have collapsed from it. No fun at all. Too much coffee is cardiotoxic, and most sugar-free liquids -- like diet soda, etc -- are also pretty bad for you. I know that some of them show signs of leading to increased bone loss in some studies -- although now I think of it, I can't remember where I read that, so don't ask for proof.
In general, moderation in all things is a good rule. Too much of anything ain't good for you, and eating just once a day is particularly bad.
Do you have a therapist you can talk about this with?
