Based upon my miniscule knowledge....
Tabitha has it right. All cases are actual, and no acting or coaching is involved. The only prior work done by the producers is in selecting cases which can be solved in about 10-15 minutes, so they are all cut-and-dry, simple, to the point.
All parties agree to dismiss their actual cases and are contractually obliged to abide by the ruling given on TV. That is part of the reason all of the "judges" are real, authentic judges: so their rulings will be legally binding.
