both taurine and glycine are the amino acids the magnesium is chelated to (bonded with) so you absorb the magnesium as a protein rather than an ionic metal (ionic forms compete with other metals like calcium for absorption).
I personally find glycine a little bit sedative, and taurine is calming and seems to put me in a good mood for a little while. However taurine keeps me up at night if I have too much as it can affect dopamine (which for me is more than 500mg a day), so I would personally take magnesium glycinate, because Mg taurinate would have a LOT of taurine compared to magnesium. Mg Glycinate is better for sleep because there is no 'up' from it.
And for what it's worth, I think it is an excellent idea for you - only saying having recovered from bulimia myself. Have you thought about maybe thiamin and zinc as well? For me vitamin B1 (thiamin) was extremely helpful for my ED.
